My machine updated to 12.5.1 last night and now my sticky notes, not the app, are all gone. I tried going to a backup in time machine, but am not sure of what to choose to get them back. I tried data, but they still didn't come back.

since macOS Catalina StickiesDatabase is automatically migrated by the operating system:
Finder>Go>GoTo Folder, copy and paste:
~/Library/Containers/Stickies/Data/Library/
