I’m trying to set up a second account on my MacBook Pro. It will be for my wife. Can I add her Apple ID? I already have the device linked to my Apple ID on my user account.

If you create a second user account, you can add your wife's Apple ID to that account. Your wife's account can be an admin or standard account. She doesn't have to use the Guest account.
Only one Apple ID can be associate to a device at a time.
