deleting old outgoing smtp servers

i have a laptop (monterey), desktop (high sierra) and iphone.

i would like to delete old outgoing (?) SMTP servers since any time i get in there rhere are like 30 of them.

also. i have gmail, hosted website email and an icloud account (and a couple others). is there a good way to know which outgoing SMTP servers i need to keep for gmail and or icloud?

gmail is smtp.gmail.com

iCloud is smtp.mail.me.com

Mail>preferences>Accounts>Gmail>Server settings>Outgoing Mail Account>Edit SMTP Server list?highlight & use tiny minus icon below.
