E sims and International travel

I plan to travel overseas and want to get a physical sim in the overseas number but have my Canadian number in an e-sim. Can I turn the Canadian number off while I am overseas, so I don't incur roaming fees?

With my upcoming trip to Iceland, I am very worried that if I buy the new iPhone 14 Pro Max, the Mobile Carriers in Iceland do not support the eSIM technology and still use the traditional SIM cards. How do I resolve this if the new iPhone 14 Pro Max does not have the traditional SIM card tray and Mobile Carriers do not offer eSIM?
