Is it possible the usage of my iPhone 11 is being monitored?

I believe someone has installed a trust certificate to monitor my phone usage. Like a keystroke type deal. I’m not too savvy on this stuff but im aware enough to know when something is off. How do I make sure that my iPhone 11 is secure and free of this threat to my privacy?

So you handed your phone to someone, who knows your passcode and sign in credentials? That's the only way someone could install anything on your phone.

If you did and they installed a certificate (highly unlikely), go to Settings > General > About > Certificate Trust Settings. If anything is there, delete it. Chances are you won't find anything.
