I don't have "Erase All Content and Settings" on my iMac
I have a 1997 iMac 27" with Intel Core i5. I don't see a clear/clean way to erase all my data. I am about to trade this iMac for a 2022 iMac 24" M1 Chip.

The "Erase all...." option was not available until macOS Monterey:
Erase all content and settings on Mac - Apple Support
so you use these instruction set instead:
What to do before you sell, give away, or trade in your Mac - Apple Support
skipping Step 1.
There was no 27" iMac nor an Intel Core i5 in 1997.
