Can removing the sim card of the old phone get me the sam result?

The only thing stored on the SIM is your mobile telephone number. Transferring the SIM will not transfer your data or accounts.

I can't remove my data from my old phone. What should I do. I don't understand the instructions provided. Can I remove the sim card to cancel my service on that phone?
I recently purchased a new iPhone which was mailed to me. I set up my new phone without removing accounts, personal content etc from my old iPhone. I am spending so much time trying to do that with instructions online. I want to remove my Sim card
