I don't think Polish is being added in iOS 16 as far as I can tell...
I see. Unfortunately you will have to wait a bit longer. I cannot see Polish in the list of Siri languages on my phone with iOS 15. I was not aware that Polish was absent.
Perhaps you could continue to give Apple some feedback asking for Polish to be added. There is no Siri option on the feedback page so iPhone might be the best choice.
