Jay ~ If you're referring to a third party app:

Delete apps on your iPhone, iPad, and iPod touch - Apple Support

If you're referring to the camera's automatic detection of QR codes:

Settings > Camera > Scan QR Codes = Off

...Found by searching Apple's Knowledge Base.
