Can the CountIfs formula be used to count cells that do NOT equal x or y?

I'm using the CountIfs formula and I'm wondering if I can have it count all values in my "other" category. Example tables are below:



Basically on the table 1, I'd like the Other category to count if value does not equal 'Apple' or 'Orange' but does equal 'Ripe' if that makes sense. Is this possible?

COUNTIF all the "ripe" rows and subtract from that the results for Apple and Orange in the two rows above it.


Or you can use COUNTIFS with the conditions being

"ripe" , "<>Apple", and "<>Orange"

or

"ripe" , "<>"&A2, and "<>"&A3


I think the first way is the best of the three.
