Since installing the latest update, my12.9" iPad Pro is nothing more than an oversized drink coaster.

How can I uninstall the update and return to a previous software version? I can possibly save my job, my countless hours upon hours of work that seems lost, and get back to my life which is all encapsulated in my newly obsolete iPad if and only if I downgrade the software or Apple fixes this disaster sooner than later.

Rolling-back to an earlier version of iOS/iPadOS is not possible.

All System Updates are digitally signed by Apple - and can only be installed whilst the digital signatures remain valid. After release of a new iOS/iPadOS version, the immediately preceding version continues to be digitally signed by Apple - however, usually within a few days, Apple will revoke the digital certificate with which the earlier version is signed.

What precisely has happened since updating your iPad?

If you have a pre-existing iCloud or iTunes backup of your documents and data - as you should always have if your data is important to you - you’ll be able to restore your data.
