You can't with typed text

You can ONLY highlight handwritten notes with the Apple Pencil using Sketch mode and using the highlighter pen, ib the tools palette.


A workaround for this is to take a screen shot of a typed note and use the iPadOS Markup feature snd markup tools to highlight the photo/image that way,
