Hello, I just want a simple automation rule. Whenever I get notifications from my bank (received or sent payment) I want this value (direct amount of money) to get saved into my notes. Do you have any idea how to start this shortcut?

Ask your bank to add that capability to their banking system.
As for how to automate this without the assistance of the bank, you will need to detail where and how the information is stored, and how you are notified of the change; mail, SMS, banking app activity, web portal login, something else?
The arriving payment notification would have to be accessible to the Shortcuts app, and that’s probably going to be a problem. Shortcuts isn’t event driven.
If the payment notification you are receiving is an iOS or iPadOS system notification, Shortcuts has no means to receive and read and parse and process that data.
