Why doesn’t iTunes accept my Santander Mastercard?

MasterCard is an acceptable form of payment in the iTunes Store of just about every country. See details in here: Payment methods that you can use with your Apple ID - Apple Support

If your card is rejected by Apple (or any other retailer) for no apparent reason, contact the card issuer to resolve the issue.
