I want to exchange my watch band for a different color, and I bought it at a physical store but I accidentally deleted my receipt and also deleted my trash. Can I still exchange it

Since you made the purchase at the Apple Store you should be able to go there and get them to locate that information. Make sure to bring your previous form of payment.
