Is there any way to disable this alert? I do not want to do an update but want to use my macbook to charge my iphone. I am using a Macbook Air 2020 and each time I try to charge my phone this alert comes up and disrupts my external monitor.

No.

You can either update or ignore it.

Do note, it's just a quick update to Finder / Music App to connect to the iPhone. It will not update your macOS version or change any major things on your computer. It should take less than 3 minutes to complete if that. No reason not to just update to get rid of the notice.
