eSIM not available in my country

What if eSIM is not available in my country and only Physical SIM cards? Does that mean I can't purchase the iPhone 14 or iPhone 14 Pro phone series?

No, only the US models will be e sim only

It just means you can't buy one in the U.S. You should buy one in your country.
