I'm new to Adobe's CC and never had this issue before I upgraded from CS3 to CC - and from El Capitan to Monterey.
Why are the colours wildly different when viewing in Acrobat Pro DC compared with Apple's Preview?
Is there anything I'm missing or not doing right?

Your Adobe software may be using an Adobe-specific color profile that is not recognized by Apple's Preview. For instance, it may be using a CMYK color format with a Coated FOGRA27 color profile. Acrobat Pro DC may also respond to Adobe-specific color features in the PDF that Apple's Preview may simply ignore.
The two programs are wildly different. Preview is in no way a replacement for Acrobat, nor is it a replacement for an image creation/manipulation program. It is merely a simple way to “Preview” the content of certain files.

I think safer to send files as JPEGS instead of PDFs to my clients then. Since they probably won't have Acrobat Pro DC.
JPEGS are probably less troublesome and more universal, and will give more reliable colours at their end.
