Does anybody know what version of iOS the new iPhone 14/Plus/Pro/Max will ship with? Will it be 16 or 15.6.1?

It will ship with ios 16.

You can always transfer a backup from an older version of iOS to a newer one. So, you don't have to update your current iPhone if you don't want to.
