iOS 16 Update - Long Download Time
Other than the servers being pushed to the limits is there any reason why the download is taking several hours?

The download is fairly large. If your internet connection is not particularly fast it will take some time. There's also a ton of people trying to update at the same time which slows down the server too.
Just be patient and it will complete and likely in much less than 4 hours.
