Apple one versus Icloud storage

What happens to the data stored in my icloud account, if I opt for apple one with greater storage?

Nothing. Data is retained when you choose Apple One. It just changes the way you pay for iCloud storage, but does not change the way it is accessed or affect any thing that is stored on it.
