iPhone Hotspot

Your Personal Hotspot is always on however is only discoverable by devices when the "Allow Others to Join" toggle is enabled (this can be found in Settings > Personal Hotspot > Allow Others to Join [ON]) on the cellular device. One important note: regardless of whether this option is enabled or not, devices such as a MacBook or iPad will still be able to see this network in their Wi-Fi settings if they are using the same Apple ID -- this feature cannot be disabled.

Other than turning it off in settings I don’t know that you can hide it

You can't. Apple advises against using a "hidden" network, which as you know is not really "hidden" anyway.
