I’m connected to the wife to update my iPhone 11 but it wouldn’t update due to it saying not connected to network

If by "connected to the wife" you mean that you have connected your iPhone to another iPhone that has enabled a "Personal Hotspot," then this won't work. You would have to connect your iPhone to a Wi-Fi network to either update or upgrade your phone.
