Are you trying to remove the Now Playing icon from the Menu Bar and Control Center? If so, go to System Preferences > Dock & Menu Bar > Now Playing and uncheck show in Menu Bar. Note that it indicates it'll always appear in Control Center.

I've resolved the problem though, exactly how, I'm not sure. What was happening is that when I opened Google Chrome, "Now Playing" would auto-start playing something random. It turns out that this "Now Playing" app is tied to YouTube but I haven't figured out exactly how nor did I really figure out how to turn it off. I didn't have a problem with the app icon appearing in the menu bar or in the control center; just that it would auto-start and I couldn't figure out how to disable that part of it.
My resolution? I had 2 desktops open and this "Now Playing" app was running in one of them. When I closed the "offending" desktop, the problem went away.
If anyone knows how to disable this app or applet, whatever it really is, please post your solution somewhere prominent.

Apologies, I should have been more clear about the device involved. This is on a 2021 13" MacBook Pro running OS 12.0.1 (Monterrey).
And, to be even more clear, it only happens when I restart the computer and open Google Chrome. I haven't restarted in quite a few days so it hasn't again been a bother.
