I bought an apple watch series 8 from Currys (UK) and don't like the band it comes with, so haven't even opened the packaging. I want to exchange for another one with Apple but cant find the answer anywhere and support didn't know the answer.

You have as many days as Currys allows to return the device. Apple has a 14 day return policy, but third-party resellers can make their own policy. Apple will not return a device they did not sell, and they can't accept it as an exchange either.
Once you return it, you can then go buy the Apple Watch you want from Apple.
Alternatively, you can just purchase the band you do want from Apple or a third-party, and keep that band as a spare, or sell it to someone that would like an unused band. Cheers.
