Setting up new Apple Watch
I’m in Australia and I have a brand new Apple Watch with cellular. When I try to set it up it says my carrier doesn’t support Apple Watch - I’ve rung them and they do.

Welcome to Apple Support Communities. We see from the screenshot you need help with setting up your cellular Apple Watch. We're also glad to hear you already checked with your cellular provider to make sure they do support it. There are a few other items to go through.
We'll want to make sure the model of Apple Watch you have does also support working with your cellular provider in your region. To confirm your model number, do the following:
That number, starting with "A", is the model number we need to confirm. The following models are supported:
Apple Watch Series 8
Model A2773 (41-mm)
Model A2775 (45-mm)
Apple Watch SE
Model A2725 (40-mm)
Model A2724 (44-mm)
Apple Watch Ultra
Model A2684
