Keeping second hand visible on watch face

I work in the veterinary field I'm trying to figure out a way to use my watch for taking heart rate and respiratory rate but I can't get the second hand to stay up. I tried giving it a longer wait time but it's not really practical while also trying to hold a squirmy animal and keep my wrist in the perfect spot. Does anyone know if there is a watch face or a setting that allows you to keep the second hand visible at all times?


My current solution is that I have a second pocket watch that I use but it would be really nice to just be able to use my apple watch for this
