I have an iPhone X and iOS 16 update is still not available. Any reason why. I am trying through general - software update every day, but still I don’t have it available.

Have you ever install / use iOS Beta version, then remove the beta profile (Settings -> General -> VPN & Device Management).
Then Restart your iPhone and check for updates again.
Go to Settings -> General -> Software Update -> Download and Install.

Then most likely you had a beta of a previous version on your phone, and you never deleted the beta profile and updated to the latest released version.
Do you have a MDM profile?
If so, contact your company - IT department.
