Can I update the Security for my Wifi under Network in System Preferences under the WiFi tab?

You need to change it in the router settings. If you don't have instructions for your router, do an internet search for your router brand/model or if your router was supplied by your internet service provider, check their support website.

WPA 3 is relatively new but WPA 2 AES has been around for a long, long time. Look for the AES option in the same security settings area in many routers.

But if the router doesn't support it there is nothing you can do.

Correct. The router needs to be capable of providing the wanted security level.
