You can customize the clock widget or remove it all together.
Once you are in the customize screen, you can remove, add or edit the widgets on that lock screen.

On your iPhone, iPad or iPod touch
Go to Settings > General > Date & Time. Turn off Set Automatically. Now you can change the time zone or the date and time: Tap Time Zone and enter a city with the time zone that you need.

Actually, you can change it from Cupertino. From the customize screen, tap once on the widget to open the Add Widgets panel and then again on the widget (the one already added) to select a city.
Yes, the time in Cupertino/Pacific doesn't apply to me/my work. I don't use that time zone in any of my clocks, but I cannot figure out why the lock screen widget always displays it, no matter what I adjust/fidget with. Someone, please, help!
Thank you! It was counter-intuitive, especially since I have an Apple Watch, and all the complications are tied to apps (e.g. other time zones pull from the Clock app). I assumed the widgets would be too. But ok. At least it makes sense once you know how to do it.
I'm actually talking about the time zone here on the lock screen. It has been set up defaulted and uneditable.
