I want to participate in testing on my iphone, beta version of an App. For that the developers need my iphones UUID
I do not have access to itunes or a USB cable.
How do I get this information without rubeGoldbergism ?

A connection to Mac or Windows is the only way.
And you do have access to a USB cable, as you use it to charge your iPhone.
Okay, so newer USB-C charging cable and older Mac with USB-A connectors.
You’ll need an adapter to go from USB-A to USB-C, or a USB-A charging cable.
I’d pick the USB-A charging cable, if your Mac has USB-A ports, as that also means you can back up your iPhone to the Mac, and charge from your Mac.

Wi-Fi backup is entirely independent of the Lightning connection.
iPhone has a Lightning connector.
It seems you also have a USB-A to USB-C adapter.
Which Lightning cable do you have? Lighting to USB-C? Or to USB-A?
It seems you have all the parts you need to connect your iPhone to your USB-A Mac to get the UUID, though.
Or did Apple send you home without the adapter?
My iPhone charger cable does not fit into my MBP. The newer cables look like usb3
