Location without cell service

How does iPhone determine my location when no cell service is available?

On a recent hike, got terribly lost. No cell service, but using Apple Maps we were able to determine North and some map detail. Able to hike out without incident. Could have been a terrible outcome had this feature not worked. It quite possibly saved our lives.

Would like to understand this feature more.
