iPhone 7 updates
In regards to iPhone 7, it has never been updated in the last 4 years. If I update to the latest update which is 15.7 now, will it work?

Try first to optimize the range of the mobile network, see this Apple article:

Yes it will work,
You need about 6 GB device storage and good Service & Wi-Fi.
If they are On, turn Off Hotspot & VPN.
Charge the battery > 70%.
