what if I received an email notifying me to change my apple ID because my employer is reclaiming the email address, but my apple ID isn't my work email AND my notification email address isn't my work email?

It sounds like a blanket notification to all/any employees who MIGHT use the business’
email as THEIR “personal” AppleID.
Since none of your AppleID “stuff” apparently uses employer’s email domain, it would seem
that there’s nothing for you to do.
