If my phone is within the limited warranty period and sustained enough problems that Apple is exchanging the whole unit, can I receive a new color of the phone with the new unit. For example I had the pink iPhone 13 that need to be exchanged could I request a green iPhone 13.

No. They will only replace it with the same color. Only exception would be if they absolutely couldn’t get a replacement in the color you had but that is highly unlikely.
