All of a sudden streams of email from companies arrive that are advertising or saying I signed up for a service. How do I stop them besides blocking 1000+ new emails?

Hello corrimony,
If you have a MacBook, consider setting up inbox rules to prevent similar messages from getting through: Use rules to manage emails you receive in Mail on Mac - Apple Support. If the emails, subjects, content, are similar you can setup a rule to automatically delete these emails.
I'd also recommend signing up for iCloud+: What is iCloud+? - Apple Support. With iCloud+, you get access to Hide My Email which will allow you to create a unique and random email address you gave give to websites and companies: Create unique, random email addresses with Hide My Email and iCloud+ - Apple Support. If you get spammed in the future from that address you can just deactivate it and you'll no longer receive emails from that address.
I hope this helps!

Thanks For that. I filter the occasional strange email, but today it’s 1000+ so it will be a slow and painful process to filter all of them.
I have used anonymous iCloud + email occasionally. Every sender uses the same root Email
