I am trying to update iOS 15.7 on my iPhone 6s from last one month straight...
i had to delete every app on my phone but still it says error to install even though I have 6.7GB space on my phone without downloading IOS 15.7

That should be enough.
You need about 6 GB device storage and good Service & Wi-Fi.
If they are On, turn Off Hotspot & VPN.
Charge the battery > 70%.
