Will the adapter take the XQD card
Will the Apple Card adapter accept the XQD card used with NikonX7 camera
and do I need any special programs

I’ve never heard of Nikon X7, you mean Z7?
If you are using a XQD card reader, should be able to read the card without additional driver. But, if you have a XQD reader trying to read CFExpress card, likely the reader may not read the card. If you have a CFExpress reader, likely able to read both XQD and CFExpress cards. Best check with seller/manufacturer before purchase.
