On App Store it says it’s compatible with A17 Pro or later, which would mean that it should be compatible with the iPhone 16e, but at the same time, the iPhone 16e is not listed and also has 1 GPU core less than the iPhone 16 listed. So, are these games compatible with the iPhone 16e or not?

Yes. Be aware that CPU/graphics-intensive Apps may significantly increase battery consumption (requiring more frequent recharge). Similarly, graphics-intensive games may cause your iPad to become very warm while playing.
