I sync to iCloud but how do I save some docs just to my MacBook Air?

I use Ancestry Family Tree Maker software to build my family tree. After I made a muck-up I needed to restore my last copy which worked fine. But, now I have two trees on my Mac which are getting confusing.

Can I archive one so that whilst I will still have it, it will stop syncing with iCloud? I read about the local folder and it seems to be either 'MacBook Air' or 'On My Mac'; either way, the file/s I am trying to move don't seem to want to go. Any ideas?

MacBook Air 13″, macOS 12.6

Open a Finder window, use the Finder "GO' menu and click "Home" then click File menu > New Folder and name the folder (it will be named "untitled folder" before you rename it. You can then copy or move or save files to that folder.

You can access the folder via the Finder Go Home or via your Finder sidebar and look for the folder with the home icon. You new folder will be in that Home folder.
