I have no idea where or how the SIM card goes?

There is no physical sim card,it's what is called an E-sim,see this,

If you own a cellular Apple Watch, there is no physical sim card slot. Apple Watch employs eSim technology. You need to contact your cellular provider to establish cellular service on your watch.
