Go to Settings->General->VPN and Device Management and make sure you have removed the beta Profile from there completely.

Then restart the iPhone, connect to Wi-Fi, and try again.

Possibly. You may need to restore it to factory condition. Link-> Restore your iPhone, iPad, or iPod to factory settings - Apple Support

On an iPhone 12 mobile data should work for updates if your carrier supports it. However, since you are having an issue, it's always advisable to try other options just to rule out potential issues with the cellular connection.

Try it over Wi-Fi and see if works. If it does, then you can contact your mobile service provider and tell them there is an issue with there mobile service.

mobile data works fine for me, I have it verified. The point is that in the morning I removed the beta version exactly according to your instructions and restarted the phone several times. When I wanted the official version and start the update, the phone reports

,,Unable to search for update, an error occurred while searching for software update,,

Did the beta install mess up my phone?
