how to unpair apple watch from lost iphone

I lost my iPhone. All the instructions appear to require the phone to which the Apple Watch is currently paired, to be next to said phone, in order to unpair. Since I lost my iPhone, I cant unpair it to pair it to the new one.

How can I unpair the watch from the unavailable iPhone?
