Recently, since the latest iOS update, I have not been able to forward and email to a group in my contacts list. I can create an email to the group but I cannot click the forwarding arrow and select the group I crreated within my contacts.

I wasn’t able to test it fully but I’ll create a group of all my random email addresses and spam myself to see if I can make it work, but my assumption is it doesn’t as you discovered. About all you can do is send feedback and hope they fix the problem in a follow-on OS.
if I can replicate it, I’ll send a problem report that hopefully gets a tiny bit more notice than the feedback system.

If you are asking about Mail in iOS, then this is the wrong forum.
If you are actually asking about Mail in macOS Monterey, can you type in the name of the group?
Not a great workaround, but may be possible. I didn't have anything I wanted to forward to any of my groups, but I did get an active send button when I typed in the name of the group.
When I select the forward arrow on my email (Mail in macOS Monterey) and I then type in the name of the group to whom I want to forward the email, all I get is the first name in the group listing. I have some 20+ names in that group.
I can go to the group name in my contacts list and create a new email for the group which works fine, but I cannot forward an email to the group.
