My apple watch is no longer syncing with my iPhone. My watch has disappeared from my devices

Just to confirm, is the issue with syncing or pairing? If the device is no longer paired, make sure that Wi-Fi and Bluetooth are toggled on for the iPhone by going to Settings > Bluetooth and Settings > Wi-Fi. These will be necessary to ensure a successful connection to the Apple Watch. Then try restarting the iPhone and Apple Watch.
