I had to create a new Apple ID

Why?

Creating a new Apple ID is always one thing, sounds like creating a problem.

1.

Your Apple ID is the personal account you use with all Apple products and services. It includes the email address and password you use to sign in, as well as the contact, payment, and security details that you use with Apple.

You can’t merge multiple Apple ID accounts.

2.

somehow iTunes still has my old email

Not sure what you do with your 'old email'.

If you have deleted it, it is no longer valid, it simply no longer exists and it no longer works.

To understand about a deleted Apple ID, see the Apple articles below:

If you have not delete it yet, keep it, if you don't want to lose all your purchases that you have bought with that 'old email'.
