If those individuals have your information saved in their contacts then this may be expected:
If the hashes are verified, the recipient’s first name and photo (if present in Contacts) are displayed in the sender’s AirDrop share sheet.

If this is happening with individuals that don't have your details saved in their contacts, have you also had the chance to review the name for your iPhone per the steps below? Change the name of your iPhone - Apple Support
1. Go to Settings> General > About > Name.
2. Tap, enter a new name, then tap Done.
