Calendar time zone for airline flights

Apple calendar has always made sense to me on iPhone/iPad- i.e. I can enter the time zone for the departure and arrival of airline flights separately. Windows does the same. But I'm new to MacBook Pro (Monterey 12), which only allows one place to enter a time zone. This seems bizarre to me, what am I doing wrong?

If you enable Time Zone support, you set the Time Zone you are in.

You can enter events in other zones, but they will appear in the time zone selected.

When you change Time Zones, you change the zone in the Toolbar. It will then show everything in that time zone.
