Is there an option to set up an expiration for emails I am sending from my iCloud mail account?

Example: I don't want the email content to be available after that specific date/time to ensure that any time-sensitive information is not accessible after expiration.

There is no expiration date / time for mails that are already sent from iCloud , the mails move from outbox with its content and they will be definitely accessible by recipients , the way you expect will never work .
