How do I know that my phone is up to date ?

What do you see at Settings/General/Software Update? Can you post a screen shot?

The current version is 16.1. If yours says it is up to date with 14.7 you have a beta version installed; that’s just one of many reasons not to install betas on a primary phone. Here is what to do about it→How to uninstall iOS beta software - Apple Support

Go to Settings/General/Software Update. If it isn’t up to date you will be given the option to update it.
